Le Louvre Patisserie | French Artisanal Bakery – South Jakarta


Le Louvre Patisserie is looking for a disciplined and passionate Boulangerie Baker to join our French bakery production team.

We are seeking someone who understands the importance of fermentation, dough handling, consistency, and artisan bread quality.


Position

Boulangerie Baker / Artisan Bread Baker


Main Responsibilities

·       Prepare and produce European/French Boulangerie and Asian bread for bakery products.

·       Handle daily dough production

·       Maintain consistent product quality, texture, shape, and taste

·       Follow daily production schedule and output target

·       Maintain cleanliness, hygiene, and food safety standards

·       Control ingredient usage and reduce waste

·       Support new product trials and menu development when required

·       Work closely with pastry and kitchen team to ensure smooth production flow


Requirements :

·       Minimum 3 years experience in European boulangerie and Asian bread production

·       Strong understanding of Dough mixing, Fermentation, Proofing, Baking temperature, Bread shaping

·       Experience with sourdough / natural levain is a strong advantage

·       Able to work early morning/ night shifts

·       Disciplined, clean, fast, and detail-oriented

·       Able to work under production target

·       Good teamwork and positive attitude


Preferred Qualifications

·       Experience in French bakery, artisan bakery, hotel bakery, or premium café bakery

·       Able to produce consistent baguette, sourdough, brioche, and artisan bread

·       Basic knowledge of yield, waste control, and production efficiency

If you has Viennoiserie competency would be point Plus


Performance KPI

·       Daily production target achievement

·       Product consistency and quality

·       Waste control

·       Hygiene and SOP compliance

·       Speed and discipline during production
