Job Description – Sous Chef (Italian Restaurant)
Casa Cuomo Ristorante is seeking a passionate and experienced Sous Chef to support the Executive Chef in delivering an exceptional Italian dining experience. The ideal candidate possesses strong leadership skills, extensive knowledge of authentic Italian cuisine, and a commitment to maintaining the highest standards of food quality, consistency, and kitchen operations.
Key Responsibilities
Assist the Executive Chef in overseeing all daily kitchen operations.
Supervise and mentor kitchen staff to ensure efficient workflow and high performance.
Prepare and present authentic Italian dishes while maintaining consistency in taste, quality, and presentation.
Ensure all food is prepared according to recipes, portion standards, and quality specifications.
Monitor food preparation, cooking techniques, and plating to meet fine dining standards.
Manage inventory, stock rotation (FIFO), ordering, and food cost control.
Maintain strict compliance with food safety, sanitation, and HACCP standards.
Support menu development by contributing creative ideas and seasonal specials.
Coordinate with Front of House teams to ensure seamless service and guest satisfaction.
Assist in scheduling kitchen staff and maintaining productivity during service.
Ensure all kitchen equipment is properly maintained and report any maintenance issues.
Take full responsibility for kitchen operations in the absence of the Executive Chef.
Foster a positive, disciplined, and collaborative working environment within the kitchen team.
Qualifications
Minimum 3 years of experience as a Sous Chef or Senior Chef de Partie in an Italian restaurant or fine dining establishment.
Strong knowledge of authentic Italian cuisine, cooking techniques, and premium ingredients.
Proven leadership and team management abilities.
Excellent understanding of food safety, hygiene, and HACCP standards.
Strong organizational and time management skills.
Ability to work efficiently under pressure in a fast-paced environment.
Creative mindset with attention to detail and presentation.
Good communication skills and the ability to collaborate across departments.
Culinary diploma or relevant professional certification is an advantage.
